Chocolate Pantry Cake

A super simple recipe for a deliciously moist chocolate cake using only items found in your pantry! Can you believe it? This decadent chocolate pantry cake has no eggs, butter, or milk in the recipe, not even in the chocolate frosting!

Ingredients

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1/4 cup cocoa powder
  • 1/2 tsp salt
  • 1 tsp instant coffee, optional
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tbl vinegar (apple cider or white)
  • 1/3 cup vegetable oil
  • 1 cup water

Frosting

  • 1 cup confectioner's sugar or more to taste
  • 3 tbl cocoa
  • 1/3 cup vegetable oil
  • 1 tsp vanilla
  • water

Instructions

  1. Preheat oven to 350 degrees. 

  2. Lightly grease a 9 inch baking dish. I like to line the bottom with parchment, but that's optional.

  3. Whisk together dry ingredients in a medium bowl.

  4. Whisk together wet ingredients in a bowl.

  5. Pour  wet ingredients into dry mixture and combine well. 

  6. Using a rubber spatula, pour and scrape batter into prepared baking dish.

  7. Bake at 350 degrees for 30 - 33 minutes, until a toothpick inserted in the center comes out clean.

Frosting Instructions

  1. Place confectioner's sugar, cocoa powder, vanilla, and oil in a mixing bowl, and using a stand or hand-held mixer, beat until well incorporated. Add in a tbl of cold water and beat until desired consistency. Feel free to add a bit more water, 1 tsp at a time, or a bit more confectioner's sugar, 1 tbl at a time until you reach desired consistency.

  2. Frost cake once it has cooled. Enjoy!
