I don’t know about you, but I secretly feel like eating healthy food can be a bit of a hassle. There’s just a lot more washing, peeling, dicing, and chopping involved in making a salad than, say, opening up a package of chips. Don’t get me wrong – I love feeding my family real food, it’s just the prep work I hate. Anyone else hate all that peeling and chopping?
So when I heard about Perfectly Imperfect Produce’s NEW Diced & Easy meal kits – featuring already diced and prepped ingredients, I was pretty excited. Are you familiar with Perfectly Imperfect Produce? Founded by Ashley Weingart in Cleveland, Ohio, Perfectly Imperfect Produce has a mission to “reduce food waste and improve healthy food access for all.”
Did you know that supermarkets reject fruits and vegetables that are a little too big or too small, a slightly different color, or formed in the wrong shape? This amounts to tossing almost 40% of the food we produce. That’s right. Almost HALF of the food we produce gets rejected. Not because we can’t eat it, but because it isn’t pretty enough to sell. All while over 41 million Americans continue to experience food insecurity. Perfectly Imperfect Produce decided to change that. They rescue this “imperfect” produce from farms and wholesalers and deliver it directly to your home, along with new recipes to try. And for every box of produce you order, another gets donated to a food pantry.
And I’m so excited to tell you about their new Diced & Easy meal kits. These veggie-forward meals come prepped and ready to cook. So you can get a delicious and healthy dinner on the table without all the hassle. Along with these ready-to-cook meal kits, you can also choose from fully prepared salads, grain bowls, fruit and veggie infused waters, and even sliced-and-diced fresh fruit and vegetables for hassle-free, healthy snacking!
My meal kit included all the ingredients to make cauliflower tacos. It was delivered to my door, already prepped and ready to go. I’m a pretty big fan of tacos so I was excited to find a new recipe to try. All the ingredients were packaged together, along with a recipe.
For the cauliflower tacos, my kit included diced onion, chopped cauliflower, garlic, spices, cheese, tortillas, along with some fun garnishes like sliced radish, avocado, and fresh lime.
All I had to do was toss the cauliflower in the spices and a bit of oil, and roast in the oven. While the cauliflower was roasting, I set the table and warmed up the tortillas.
In about 20 minutes, I had a delicious, healthy dinner on the table. I love that I can serve my family a nutritious meal, while saving time and helping to fight hunger in my community.
I also tried a few of the Diced & Easy prepared salads and grain bowls for lunches throughout the week and I loved not having to think about what I was going to make as I ran out the door to work.
Each salad or grain bowl comes packed full of fresh produce, along with a delicious dressing or sauce to drizzle over everything.

And here’s my favorite part – all packaging for these meal kits is the most environmentally friendly option available. Containers are all made of compostable plant fibers, 100% post-consumer recycled plastic or recycled plastic. Box liners are all made from CORN and can be dissolved in water or burned! Ice packs can be cut open and emptied down the drain or even used as plant food. Pretty cool, right?
If you’re looking to incorporate nutritious and healthy food into your week without all the hassle – definitely check out these new Diced & Easy meal kits and lunch options!
